For your enjoyment…

Do you feel the same as I do on weekends on or special holidays, or when you have guests over? I’d like to cook something very special, not the usual fare. Then I’m either spoiled for choice or I can’t think of anything at all. If even intensively searching the internet turns out to be fruitless or leafing through piles of cookbooks doesn’t turn up any solution, try our Recipe of the Month!

From the chefs of the Schick Restaurants in Vienna, every month there is a new, seasonal recipe from Austrian-Spanish or Viennese cuisine for you to prepare and enjoy at home! If you don’t want to have to prepare the recipe yourself, you can order the finished dish in comfort at the corresponding Schick Restaurant and indulge all around…

In December 2014 – recipe by Roman Rothmayer – new chef of the Restaurant “Das Schick”:

Soufflé of “Rovira”-chocolate gingerbread
roast apple

Ingredients for 4 servings:

125 g Rovira chocolate
125 g butter
3 egg yolks
3 egg whites
60 g sugar
25 g flour
gingerbread spice
4 apples
12 cloves
2 tbsp. butter
1 tbsp. candied orange peels
1 tbsp. chopped nuts

Preparation:

Remove seeds from apples, sprinkle butter on them, and bake in the oven at 200º C for approximately 15 minutes. Allow to cool. Melt butter and chocolate together in a water bath. Bring eggs and sugar to room temperature.

Stir eggs and sugar into the chocolate and butter mixture. Add gingerbread spice. Fold the flour under the chocolate mass and subsequently add the nuts and candied orange peels.

Grease four cups with butter. Dip into flour, then tap to remove excess flour. Fill with chocolate mass and allow to cool.

When the dessert is needed, bake at 180º C for 10-12 minutes (normal coffee cup size). Take Wcare when turning upside down!

Serve with the fried apples as desired – as in our photo, for instance.
