For your enjoyment…

Do you feel the same as I do on weekends on or special holidays, or when you have guests over? I’d like to cook something very special, not the usual fare. Then I’m either spoiled for choice or I can’t think of anything at all. If even intensively searching the internet turns out to be fruitless or leafing through piles of cookbooks doesn’t turn up any solution, try our Recipe of the Month!

From the chefs of the Schick Restaurants in Vienna, every month there is a new, seasonal recipe from Austrian-Spanish or Viennese cuisine for you to prepare and enjoy at home! If you don’t want to have to prepare the recipe yourself, you can order the finished dish in comfort at the corresponding Schick Restaurant and indulge all around…

In July 2015 – a delicious and simple summer-recipe by René Herzog, chef of the traditional restaurant Stefanie:

Fried chicken salad
with deep-fried chicken slices in sesame breading,
served with spume of pumpkin seed-oil

Ingredients for 4 servings:Zutaten

600 g chicken breast, sliced into strips
400 g leaf lettuce
20 g sesame
300 g potatoes
125 ml whipping cream
6 cl pumpkin seed oil
flour, breadcrumbs and egg for breading
vinegar
oil
2 tbsp. sugar
onions
cherry tomatoes
chives
parsley

Preparation:

Boil potatoes with skins. Peel potatoes while still warm, then cut into slices. Mix sugar and vinegar well, then pour on top of the warm potatoes. Mix with a bit of oil (you may use beef broth if desired) and season to taste with chives, parsley, salt and pepper.

Mix sesame and breadcrumbs, then use flour, stirred eggs and the sesame-breadcrumb mixture to coat strips of chicken breast. Fry breaded chicken strips until golden.

For the espuma, fill one iSi Whipper with whipping cream and pumpkin seed oil and make into a foam using 1 capsule.

Arrange potato salad, spread leaf lettuce over the potato salad, then marinate with olive oil and cherry tomatoes. Carefully fill glasses with espuma. Drape chicken breast strips onto the salad, as in our photo, for example.
