For your enjoyment…

Do you feel the same as I do on weekends on or special holidays, or when you have guests over? I’d like to cook something very special, not the usual fare. Then I’m either spoiled for choice or I can’t think of anything at all. If even intensively searching the internet turns out to be fruitless or leafing through piles of cookbooks doesn’t turn up any solution, try our Recipe of the Month!

From the chefs of the Schick Restaurants in Vienna, every month there is a new, seasonal recipe from Austrian-Spanish or Viennese cuisine for you to prepare and enjoy at home! If you don’t want to have to prepare the recipe yourself, you can order the finished dish in comfort at the corresponding Schick Restaurant and indulge all around…

In September 2017 – recipe by Felix Albiez – chef of the decorated Restaurant “Das Schick”:

Sweet Woodruff Crema Catalana

Ingredients for 4 servings:

500 g milk
500 g cream
80 g sugar
100 ml sweet woodruff syrup
300 g egg yolks
2 tsp. honey
juice and zests from 2 limes
1/2 stick of cinnamon
50 g brown sugar

Preparation:

For the Crema Catalana, pour the milk into a pot. Add the honey, cinnamon stick and lime peel and simmer on low heat for approximately 10–15 minutes. In the meantime, fold the egg yolks, sweet woodruff syrup, lime juice and sugar together and beat until foamy.

Remove the milk from the stove, remove the cinnamon stick and slowly stir the egg mixture into the milk. Place back onto the stove and heat slowly on low heat, but do not bring the mixture to a boil – otherwise the egg yolks can clump together. Stir constantly while heating the mixture. Once the cream becomes smooth and thick, remove from the stove and allow to cool.

Prior to serving, fill small ramekins or small fireproof plates with the Crema Catalana and sprinkle with sugar. Preheat oven to the hottest temperature, turn on the top heat or overhead grill and caramelize the crème until the layer of sugar turns a lovely golden brown color. Serve immediately. We serve wild strawberries and ice cream with our Crema Catalana.
