Recipe of the month November 2013

For your enjoyment…

Are you like me on weekends or special holidays or when you have guests? On those occasions I like to cook something very special, not the usual fare. Then I’m either spoilt for choice or nothing occurs to me. If even the most intensive search on the internet comes to nothing, or leafing through piles of cookbooks fails to offer a solution, try out our Recipe of the Month! 

From chefs of the Schick restaurants in Vienna, every month there will be a new, seasonal recipe from Austrian-Spanish or Viennese cuisine for you to cook and enjoy at home!

In November 2013 , the chef of the restaurants “Wiener Wirtschaft” and “Kronprinz Rudolph”,  René Herzog, presents the recipe of a quick dessert, which can be well prepared in advance, of the restaurant “Wiener Wirtschaft” (at Hotel Erzherzog Rainer).
Starting Dezember 2013 you can try this seasonal dessert at the “Wiener Wirtschaft”:

Mousse of chestnuts in the glass

Ingredients for 10 small mocha cups or glasses:

1/8 l cream
1/8 l milk

100 g pureed chestnuts
25 g sugar

3 gelatin leaves
1 tbsp. vanilla sugar

2 cl rum
berries, seasonal fruits, whipped cream for decoration

 Preparation:

Bring cream and milk, together with chestnut cream and sugar, to a boil.

Soak gelatin, press out water thoroughly and fold, together with the vanilla sugar and rum, into the chestnut mixture. Fill the mousse into small mocha cups or small glasses and allow to cool thoroughly overnight.

Decorate with seasonal fruits or berries according to taste or as desired – as in our photo, for instance – and enjoy!

A quick dessert that’s easy to prepare – one that’s also suitable for Christmastime!
