For your enjoyment…

Do you feel the same as I do on weekends on or special holidays, or when you have guests over? I’d like to cook something very special, not the usual fare. Then I’m either spoiled for choice or I can’t think of anything at all. If even intensively searching the internet turns out to be fruitless or leafing through piles of cookbooks doesn’t turn up any solution, try our Recipe of the Month!

From the chefs of the Schick Restaurants in Vienna, every month there is a new, seasonal recipe from Austrian-Spanish or Viennese cuisine for you to prepare and enjoy at home! If you don’t want to have to prepare the recipe yourself, you can order the finished dish in comfort at the corresponding Schick Restaurant and indulge all around…

In December 2017 – recipe by Felix Albiez – chef of the decorated Restaurant “Das Schick”:

Famer’s Duck with fir honey–ginger varnish,
served with Jerusalem artichokes

Ingredients for 6 servings:

6 duck breasts
1 kg Jerusalem artichokes
300 g ginger
100 g fir honey
50 ml soy sauce
10 Tasmanian mountain pepper
100 g butter
1 small bunch of thyme
1 bulb of garlic
salt from a salt mill
pepper, freshly ground
olive oil

Preparation:

For the varnish, peel the ginger and dice into small cubes together with 3 cloves of garlic. Mix the ginger and garlic with honey, soy sauce and freshly ground peppercorns. Cook on medium heat, reducing the mixture until it forms a thick, viscous mass.

Peel the Jerusalem artichokes and boil in salt water until soft. Remove the artichokes from the water, drip dry, and sauté in butter with thyme and 2 crushed cloves of garlic until golden yellow. Season with salt and pepper.

Season the duck breast with salt and pepper. Heat butter in a pan.

Pan-fry the duck breast on the skin side for 6–8 minutes until crisp. Flip and fry for another 2 minutes. “Smear” the duck breasts with the varnish and grill in the oven at 200° for approx. 5 minutes.

Arrange the duck and Jerusalem artichokes like in our photo, for instance, and… enjoy.
