Do you feel the same as I do on weekends on or special holidays, or when you have guests over? I’d like to cook something very special, not the usual fare. Then I’m either spoiled for choice or I can’t think of anything at all. If even intensively searching the internet turns out to be fruitless or leafing through piles of cookbooks doesn’t turn up any solution, try our Recipe of the Month!

In January 2019 – recipe by René Herzog – chef of the Hotel & Restaurant Stefanie, Vienna’s oldest hotel:

Chestnut Dumplings in Cinnamon Breadcrumbs

Ingredients for 4 people

For the dumpling dough:
50 g white breadcrumbs
175 g curd cheese
1 egg
1 egg yolk
1 tablespoon flour
2 tablespoons icing sugar
25 g melted butter
salt

For the chestnut filling:
250 g chestnut purée (frozen or canned)
75 g icing sugar
the zest and juice of 1 lemon
2 tablespoons rum

For the cinnamon breadcrumbs:
50 g butter
75 g breadcrumbs
a little granulated sugar
1 teaspoon cinnamon

Method:

Work the curd cheese, white breadcrumbs, eggs, icing sugar, salt and melted butter into a smooth dough. Once the dough is ready, cover and leave to stand in the fridge for two hours.

Combine the chestnut purée with the icing sugar, lemon zest, lemon juice and rum well and form 8 small balls from the mixture.

Form small round patties from the curd cheese dough and place a ball of the chestnut purée in the middle of each one before shaping into a dumpling.

Place the dumplings in boiling water and allow to simmer for around 10 minutes at a low heat.

Melt the butter and add the breadcrumbs, granulated sugar and cinnamon. Toast everything together until golden brown.

Remove the finished dumplings from the water and roll them in the cinnamon breadcrumbs.
