Do you feel the same as I do on weekends on or special holidays, or when you have guests over? I’d like to cook something very special, not the usual fare. Then I’m either spoiled for choice or I can’t think of anything at all. If even intensively searching the internet turns out to be fruitless or leafing through piles of cookbooks doesn’t turn up any solution, try our Recipe of the Month!

In September 2019 – a simple summer recipe by Gerasimos Kavalieris – new chef of the decorated Restaurant “Das Schick”:
Ingredients for approx. 1 kg jam:
1 kg lemons, untreated, unwaxed
100 g sea salt, coarse
1 kg granulated sugar
50 g pear brandy
Wash the lemons well and cut them, rub firmly with sea salt and leave in glasses covered with water overnight.
Cut the lemons into slices, remove the seeds and simmer the fruit together with the preserving water from the jars for 30 minutes. Stir again and again.
Add the granulated sugar and cook for 2 – 3 minutes.
Stir in pear brandy, fill into screw-cap glasses and leave to cool upside down.
The lemon jam is immediately ready to eat (after one week the jam tastes more intense).
The lemon jam tastes like summer and the south, prolongs tastefully the holidays and matches perfectly with your breakfast bread, cake and ice-cream, as well as with meat, fish and cheese.
